The Process — Nixtamal

Authentic corn tortillas, made the same way for thousands of years.

Most tortillas you buy wholesale are built to sit on a shelf. Ours are built the way corn has been turned into masa since long before there was a Texas to make them in.

Whole corn, before the lime
  1. The Corn

Three ingredients. Corn, water, and food-grade lime — cal. That is the entire recipe, and it has not changed since 1957.

  2. The Stone

We grind the corn into masa on volcanic stone we bring up from Mexico — the same stone-grinding method used since the time of the Aztecs.

  3. The Masa

Ground fresh, pressed, and cooked. No preservatives, no shortcuts. Thousands of years of know-how in every tortilla we send out.

Muleshoe, Texas — Three Generations

Irma and Jesse Leal started it. Sergio still runs it.

It began in 1957 with a stone, a sack of corn, and a family.

Irma and Jesse Leal opened Leal's Tortilla Factory in Muleshoe in 1957. Their son Sergio took it over in the 1990s, and he has run it the same way ever since — real corn, real masa, nothing added to make it last longer than it should. Three generations later, the tortillas going out the door are still made by hand, in the same little West Texas town.

Quick Answers

Wholesale tortillas from Muleshoe, the short version.

What is a tortillería?
It's the Spanish word for a tortilla factory. A real one nixtamalizes its own corn, grinds it into masa, and presses and cooks the tortillas in the same building. That is what we have done in Muleshoe since 1957.
Who makes Leal's tortillas?
We do, at our own factory at 109 E Ash Ave in Muleshoe, Texas. Irma and Jesse Leal opened it in 1957, and their son Sergio has run it since the 1990s.
What do you make?
Corn tortillas, flour tortillas, bulk tortilla chips, and fresh masa. All of it is made without preservatives.
Who do you sell to?
Restaurants, taquerias, schools, caterers, and other foodservice kitchens across Texas, New Mexico, and Oklahoma. We're a wholesale tortilla manufacturer, so we don't sell or ship online. Fresh masa is the one thing you can walk in and buy by the pound.
How do I get wholesale pricing?
Fill out the wholesale form or call (806) 272-5772, and we'll get back to you within one business day. If you already buy through Sysco, Ben E. Keith, or US Foods, your rep can add Leal's to your order.
