The corn tortillas are the ones people most often ask about — three ingredients, no preservatives, the same since 1957. What fewer buyers know is that our flour tortillas are made the same way: no artificial preservatives. We have been doing both products without them for the same reason — because we make fresh product and move it fast, and because adding preservatives to a real tortilla changes the way it tastes and feels.

Burritos

A burrito tortilla has to roll around a full protein-and-rice build without cracking at the fold point. Our flour tortillas are pliable enough to handle that. A tortilla that is too stiff or too thin will crack when you roll it tight and cost you waste on the line. We hear from accounts that have been using the same size from us for ten or twenty years for exactly this reason.

Fajitas

Fajita service means the tortilla needs to be soft, slightly warm, and fold without splitting under a hand-held portion of meat, onion, and pepper. Breakfast tacos are a high-volume, fast-service item. The tortilla gets filled quickly, often on a flat-top, and it needs to hold together through the hand-off without becoming a mess.
